Funny to think how recently Caol Ila was an Islay giant that was kept pretty much under wraps by its owner. These days it has cemented its reputation as the island's Mr. Consistent. This version shows its character the best, a nose that mixes seashore and grass with a distinct hint of smoked bacon. The peatiness isn't dominant, but flows through-out the palate, scenting, lifting and subtly changing the mix. A delicious oiliness makes it a great food whisky.

品飲筆記:淡稻草色的酒液,先是一抹清新的柑橘果香,隨後帶出海邊的鹹味與一點類似藥草/浴油的香氣。入口圓潤且帶油感,先是甜美的麥芽味,慢慢被輕柔的煙燻和海鹽感托起,尾段有鳳梨、蜜瓜的果香與淡淡胡椒辛香,餘韻帶點甜煙與微微酸感。 酒廠背景:Caol Ila 位於 Islay 海峽,為島上經典代表之一,風格清晰、鮮明,不會以厚重泥煤蓋過本身的果甜與海岸特質,是很多人初嘗 Islay 的首選。現隸屬 Diageo。 釀造與桶陳:以傳統銅製燒餾器蒸餾,熟成年份為 12 年,於橡木桶中逐步發展出油潤口感與溫和木質感。瓶裝酒精度常見為 43%(部分市場 40% 裝瓶)。 田野與環境:酒廠坐落於海風強勁的海灣,周邊的潮濕泥炭沼與大麥田賦予酒款獨特的鹹感、微礦物與泥煤香。整體是一瓶海岸風味與溫和泥煤平衡得宜的單一麥芽。

Tasting Note: Pale straw in colour, Caol Ila 12 opens with a fresh citric lift and subtle coastal notes — a whiff of medicinal/bath‑oil character and a hint of almond oil. On the palate it is smooth and slightly oily, with a sweet malty entry, light fragrant smoke and saline minerality. Fruit suggestions (pineapple, melon) sit alongside a gentle pepperiness; finish is lingering with sweet smokiness and a faint sour edge. Producer Notes: Regarded as an essential entry to Islay malts, Caol Ila 12 balances approachable fruitiness with maritime peat. The house style emphasises clarity, freshness and a gently smoky character rather than overwhelming peat. Distilling & Maturation: Distilled on Islay in traditional pot stills, this expression is matured for 12 years in oak casks, developing a rounded mouthfeel and integrated oak influence. Typical bottlings sit around 43% ABV (some market variants at 40%), with a T‑top cork closure. Terroir & Source Notes: From the coastal site of Caol Ila, the spirit bears the island's signature maritime influence — sea breeze, peat smoke and the minerality of Islay barley grown in nearby fields. Owned by Diageo, the distillery’s location on the Sound of Islay gives the spirit its briny, slightly medicinal edge.

Founded in the 19th century and today part of Diageo’s portfolio, Caol Ila produces a range from light, unpeated expressions to more traditionally peated bottlings. The 12‑year release is prized for its balance of citrus fruit, malty sweetness, coastal brine and a gentle, refreshing peat smoke.
