Tasting Note: Focused and energetic, this Premier Cru opens with citrus peel, green apple and a distinct flinty, sea-spray minerality. The palate is taut and precise — zesty acidity, fine texture from old vines and a long, chalky finish that lingers. Producer Notes: From the house of Jean et Sebastien Dauvissat, a family operation respected for meticulous vineyard work in Vaillons. These Vieilles Vignes parcels yield concentrated fruit and expressive terroir-driven character. Winemaking Notes: Gentle handling in the cellar with fermentation and élevage designed to preserve freshness and terroir expression. Matured on lees to add mid-palate texture while avoiding dominant new oak — the result is clarity and finesse. Vineyard Notes: Sourced from long-established, low-yielding vines in the Vaillons Premier Cru sector, planted on Kimmeridgian limestone and clay. The cool climate and old-vine balance produce a refined, mineral-driven wine with persistent acidity and complexity.
