Tasting note

這支2022年版來自老藤花崗岩斜坡與沖積臺地，杯色深寶石紅，香氣有成熟莓果、黑醋栗與覆盆子，接著是甘草、黑胡椒與淡淡煙燻。口感飽滿且結構分明，果實濃郁又帶香草與果醬式的圓潤，橡木陳年帶來香料感，長時間的混浸與只取自由流汁讓單寧更為細緻且有條理。酒莊以生物動力法栽培部分園地並注重地塊特性，發酵在小型混凝土槽中進行約一個月，再於橡木桶熟成14–18個月（含一定比例新桶）。建議醒瓶約1小時，搭配烤羊、紅燒牛肉或風乾肉類能把酒的力量與香氣完全帶出來。

Deep garnet in the glass, the 2022 Les Varonniers offers an intense bouquet of very ripe red and black fruits — blackcurrant and raspberry — layered with liquorice, pepper and a discreet smoky note. On the palate it is ample and solid: concentrated fruit and polished oak give vanilla and jammy touches while long, mineral-tinged tannins provide structure and drive. Made from the domaine’s oldest Crozes-Hermitage parcels on granitic slopes and fluvial terraces, fermentation is carried out in small concrete vats with a long month-long maceration to polymerize tannins; only free-run juice is used. The wine is then matured 14–18 months in oak casks (a proportion new), which adds spice and depth without losing freshness. From biodynamically farmed plots (Demeter-certified parcels), this cuvée combines power and elegance — decant for about 60 minutes to reveal its layers. Ideal with roasted or grilled red meats, rich stews and aged cheeses.
