來自瓦坡利切拉經典產區的這款 2021 年阿馬羅尼,帶出濃郁而圓潤的酒體。香氣以乾果為主:葡乾、無花果與黑櫻桃,伴隨可可、香料與淡淡皮革與菸草氣息。入口飽滿且順滑,單寧結構明顯但經過木桶陳年已趨柔和,尾韻深長且帶有苦甜巧克力和烤橡木的餘味。生產與釀造上採取人工採收,葡萄置於風乾室至十二月或一月以濃縮風味;次年二月破皮發酵,低溫慢速浸皮三十天並每日人工踩皮,完成酒石酸乳酸發酵後在大桶中陳釀至少十八個月,瓶中再熟成約六至八個月。葡萄園位於 150–450 公尺的乾燥階地,朝向偏東南與西南,土壤為壤土夾黏土及石灰質黏土,保有覆草管理與較低產量,造就濃縮而有層次的風味。推薦醒酒一小時以上再飲,搭配烤紅肉或熟成起司最對味。
A classic expression from the Valpolicella Classica, this 2021 Amarone shows the signature richness and balance of the zone. On the nose: concentrated dried fruit—raisins, figs and black cherry—wrapped in cocoa, leather and warm spice. The palate is full-bodied and velvety, with layers of ripe dark fruit, bittersweet chocolate and toasted oak; tannins are firm yet polished thanks to lengthy ageing. Producer notes: grapes are picked by hand and dried in curing rooms until December/January to concentrate sugars and flavours. Winemaking: grapes are crushed in early February, fermented slowly (12–23°C) with a 30-day maceration—12 days cold—and three daily manual punch-downs, followed by complete malolactic fermentation. Ageing: at least 18 months in large oak casks, then 6–8 months in bottle. Vineyard: vines grow on dry terraces (150–450 m) with southeast/southwest exposure on loamy-clayey soils sometimes over limestone and Eocene marl; training is pergola and row, with low yields and grassed inter-rows. Serve after an hour of decanting to let the aromas open; best drinking window 2026–2032.
