Tasting note

這款來自馬爾堡的白酒香氣明亮,先是鮮活的柑橘與橙皮,隨後綻放梨子、白鳳梨與花香。口感豐富且有層次,白胡椒與帶鹹感的香料風味為酒體增添紮實的質感,酸度鮮明讓整體保持清爽節奏。葡萄於黎明時分手工採收,輕柔壓榨後部分於不鏽鋼低溫發酵,約三分之一進入法國桶(20%新桶)發酵,完成後在桶與罐中於細澱泥上陳釀10個月,最後輕微過濾裝瓶。適合與海鮮、帶香草調味的白肉或泰式酸辣料理搭配,入口既有果香又有礦物與鹹鮮的回味,非常討喜。

Bright and generous, this Marlborough white displays brilliant citrus and orange zest up front, layered with pear, white pineapple and floral honeysuckle. White pepper and savory, textural notes give the palate a gripping, almost saline complexity while vibrant acidity keeps the wine poised. Fruit was hand‑harvested from a single Rapaura vineyard, gently pressed and split between cool stainless fermentation and 20% new French oak puncheons. Aged ten months on fine lees, the result is full-bodied, structured and food-friendly — excellent with shellfish, chive-butter fish or zesty Southeast Asian dishes.

Blank Canvas Wines is run by Matt Thomson and Sophie Parker‑Thomson. The project focuses on small parcels and single‑vineyard expressions from Marlborough, working closely with long‑term grower partners. Winemaking emphasizes gentle handling: hand harvesting, pneumatic pressing to avoid harsh phenolics, and a mix of cool tank fermentation and partial élevage in French oak to balance fruit brightness with texture and complexity.
