Tasting note: Aromas of buttered toffee, salted caramel and vanilla fudge open the glass, followed by bright citrus zest and orchard fruit. On the palate a wave of toffee, cappuccino and chocolate intertwines with warming spices—clove, allspice and white pepper—finishing on spiced fruit, burnt butter and coffee notes. Producer notes: The Irishman 'The Harvest' is a signature blended bottling produced by The Irishman distillery and owned by Amber Beverage Group. It’s celebrated for marrying the weighty, oily texture of single pot still spirit with the elegance of aged single malt. Winemaking/aging: This expression is crafted as a roughly 70/30 blend of aged single malt and single pot still whiskey, matured predominantly in ex-bourbon casks for around 7–9 years, which lends vanilla, honeyed oak and caramel complexity without heavy peat influence. Vineyard/field notes: While not a wine, the barley and distillation inputs are sourced from Irish farms with cool maritime influence; the pot still component gives dense mouthfeel and grain-driven spice, reflecting careful malting and traditional pot still distillation. Serving: Best enjoyed neat or with a few minutes of gentle aeration (about 20 minutes), which lifts the citrus and aromatic spice. Excellent with dark chocolate, creamy cheeses or coffee-based desserts.
