Producer notes: Made by Asahi Shuzo (Dassai), a house celebrated for marrying traditional sake craft with modern precision. This sparkling expression reflects their commitment to purity and balance. Winemaking notes: Polished to a 45% rate, fermented with exacting temperature control and given a gentle secondary effervescence to develop fine bubbles and a creamy mouthfeel. The result is a refined sparkling Junmai Daiginjo with pronounced clarity and finesse.
