品飲筆記:杯中呈現深寶石紅帶紫邊,前段以成熟黑果(黑莓、黑醋栗、桑葚)為主,隨之而來的是雪茄盒、煙草、烘烤香料與些許草本焙烤香。口感層次豐富,從清新精緻到飽滿圓潤,單寧仍有結構感但已開始柔化,餘韻長且帶礦物感。酒莊側記:卡龍世家以呈現風土為宗旨,風格優雅細緻、深度與悠長並存,歷年佳釀(如1947、1953、1982)都證明了其陳年實力。釀造與熟成:採手工採收並於田間先行篩選,回廠後以震動機器再做分選,於恆溫不鏽鋼桶發酵並進行18–21天浸皮,使用蛋清澄清,之後在100%法國新橡木桶中熟成20個月。葡萄園與土壤:典型梅多克的風土—厚厚的第四紀礫石覆層、下方為第三紀黏土,礫石頂部常見細緻的湖相黏土,帶來排水與結構的平衡,使酒既有力量也有陳年潛力。喝法建議:開瓶後醒一小時左右更顯風采,適合搭配烤紅肉或陳年硬質起司。
Tasting Note: Deep ruby–purple in the glass, the 2003 Calon-Ségur opens with ripe black fruit—blackberry, black currant and mulberry—layered with cedary cigar-box, tobacco and warm baking spices. The palate is medium–to–full bodied, fresh and precise, with velvety yet substantial tannins and a long, mineral-tinged finish. Producer Notes: Calon-Ségur aims to mirror its terroir with elegance and reserve; the house style emphasises purity of flavour, delicacy of texture and notable depth and length. Winemaking: Hand-harvested fruit receives an initial selection in the vineyard, followed by mechanical sorting and a second hand-sort. Fermentation takes place in temperature-controlled conical stainless-steel tanks with maceration for 18–21 days; the wine is fined with egg white. Ageing: 20 months in 100% new French oak barrels. Vineyard: The estate sits on a thick Quaternary gravel layer over predominantly Tertiary clay subsoil, with a fine lacustrine clay at the summit—classic Saint-Estèphe terroir that lends structure and aging potential.
