Tasting note

這款以傳統風乾(appassimento)手法釀製的紅酒,採收時以人工選摘,葡萄風乾60天以提升濃郁度。園內採用雙棚架栽培,地塊海拔介於100–350公尺,土壤由石灰質到黏土不等,老藤約20–25年,管理細緻。釀造時去梗輕壓、25°C發酵,浸皮10天並完成乳酸發酵,之後以木桶熟成並自然穩定。 酒體入口飽滿圓潤,口感紮實而不厚重,果實味濃郁帶黑櫻桃與李子調,伴隨香草與溫暖辛香收尾,單寧柔和細緻,餘韻綿長。整體風格兼顧濃郁與易飲性,配烤肉、燉紅肉或陳年起司都很合適。小酌前略醒45分鐘,能讓香氣更開展、口感更順。

A rich, concentrated red made using the traditional appassimento drying method. The grapes are hand-harvested in mid-September and left to dry for 60 days to heighten concentration. Destemmed, gently pressed and fermented at 25°C with a 10-day maceration (punching three times daily); malolactic fermentation is completed and the wine is aged in wood with natural stabilization. In the glass it shows a ruby red core with garnet hints. Aromas of ripe cherry and plum are threaded with vanilla and warm spice; secondary notes of dried black fruit and a lifted floral touch add complexity. On the palate it is full-bodied and round, showing concentrated fruit, soft, fine-grained tannins and a long, spiced finish. This style delivers Amarone-like depth at exceptional value—approachable after a short decant and ideal with hearty meat dishes and mature cheeses.
