品飲筆記:杯中先是濃郁的野生黑莓與黑醋栗,帶有一抹楓糖般的甜香,隨之而來的是黑胡椒、迷迭香與黑茶的香氣。橡木帶來巧克力與溫暖香料味,還有些微泥土與礦物感作為後盾。口感上飽滿多汁,果味豐厚但不笨重,清爽的酸度撐起結構,單寧帶有香草與香料的堅實觸感,收尾紮實而持久。 酒莊與葡萄園:此酒匯集北西巴羅莎多個新興園片的果實,產區包括Marananga、Greenock、Seppeltsfield、Gomersal、Moppa、Lyndoch與Ebenezer等。酒名帶點荒野與林地的情懷,目標是在親民價位呈現層次與口感。 釀造與熟成:採手工採收,於水泥、木桶與不鏽鋼槽混合發酵約6–7天,之後以籃壓入已調養的法國小橡木桶與大橡木桶(foudre)熟成12個月。裝瓶時不做澄清與過濾,保留更多質地與風味細節。 建議飲用:建議醒45分鐘,能讓香氣更開、口感更圓潤。非常適合搭配烤牛排、烤羊肉、野味或醬汁濃郁的燉肉,以及風味強烈的硬質起司。

Tasting Note: Ripe wild blackberry and black currant lead the nose, threaded with maple‑syrup sweetness, cracked pepper, rosemary and a black‑tea savouriness. Chocolatey French oak and an earthy, mineral underpinning add depth. On the palate the wine is juicy and richly textured — succulent fruit balanced by a bright, sculpting acidity and taut, spicy tannins that carry to a firm, lingering finish. Producer & Vineyard: This bottling spots the rising vineyards across the northwestern Barossa, sourcing fruit from sub‑regions including Marananga, Greenock, Seppeltsfield, Gomersal, Moppa, Lyndoch and Ebenezer. The label celebrates a rustic forest heritage and aims to offer generous drinking and complexity at approachable prices. Winemaking & Ageing: Fruit is hand‑harvested and fermented in a mix of cement, wooden and stainless vats for roughly 6–7 days before gentle basket pressing. The wine spent 12 months in well‑seasoned French hogsheads and foudre, and is bottled without fining or filtration to preserve texture and vibrancy. Serve & Pairing: Best enjoyed with 45 minutes of decanting to open the aromatics and soften the edges. A natural companion to grilled and roasted red meats, richly sauced dishes and bold cheeses. Drink now–2030 for immediate pleasure and medium‑term development.
