Tasting note

這款「花崗岩」超級香檳來自注重風土的小酒莊,名字就道出它來自石質土壤。聞起來有保存檸檬、烘烤杏仁、帶鹽味的黃梅以及微微煙草、核桃香氣。入口細膩,氣泡柔順,酸度清新俐落,中段帶出明顯的鹹味與鮮味(umami),尾韻礦感綿長。釀法採傳統釀造與長時間瓶內澀皮熟成,極低劑量(Extra Brut)保留了果酸與礦物深度。適合搭配龍蝦、貝類或微煙燻的海鮮料理,開瓶後靜置約30分鐘香氣更開放。

Ployez-Jacquemart 'Granite' Extra Brut is a terroir-driven Champagne named for its stony soils and crafted for precision. The nose opens with preserved lemon, toasted almond, salted yellow plum and a thread of tobacco and walnut. On the palate it is medium-bodied and sleek, with a fine mousse, racy acidity and a saline, umami-tinged mid-palate that leads to a long, mineral finish. The house blend is an assemblage of multiple vintages, aged on lees to build complexity, finished with an extra-brut dosage to preserve freshness and clarity. Traditional-method vinification, gentle handling and long lees contact accentuate brioche and nutty notes while the granite-derived minerality keeps the wine focused. Serve well-chilled; allow 30 minutes after opening for the aromatics to open. Excellent with rich shellfish, lobster tartare or slightly smoky seafood dishes.
