品飲筆記:杯中呈深石榴紅,先是礫石與礦物的鮮明氣息,接著是黑色莓果、黑醋栗與些許紫羅蘭,尾隨煙草、雪松和薄荷的微涼香調。入口中段果實飽滿但不厚重,酸度清新,單寧細緻帶有一點塵埃感,口感像絲綢般順滑,餘韻悠長而帶土地氣息。 酒莊與田地:酒莊面積約81公頃,坐落於礫石沖積的典型產區土壤,已取得有機與生物動力認證(Ecocert、Biodyvin、Demeter)。採用人工小籃採收,對田間管理與成熟度掌控非常嚴謹,讓酒既有傳統力量也保有純淨與細膩。 釀造小談:進廠後以人工挑選與去梗處理,使用原生酵母發酵,浸皮約四週並以柔和的下壓提取,乳酸發酵在槽中完成,之後以法國橡木桶陳放約22個月。整體釀程注重平衡與完整性,成酒展現陳年實力與細膩口感。
Tasting note: Deep garnet in the glass, this Pauillac opens with a pure, mineral-driven bouquet of dark berries, cassis and violets layered with tobacco, cedar and a hint of menthol. The palate is medium-bodied and elegantly styled: juicy fruit and bright freshness are framed by fine-grained, dusty tannins and a rocky, saline mineral streak that carries to a long, savory finish. Producer & vineyard: From an 81-hectare estate on Quaternary gravel soils, this wine is produced under organic and biodynamic certifications. Hand-harvested and managed with rigorous attention to the vineyard, the property is known for combining classic Pauillac power with clarity and finesse. Winemaking & ageing: Grapes undergo manual sorting and destemming, alcoholic fermentation with indigenous yeasts and a four-week maceration with gentle punch-downs. Malolactic fermentation is completed in vats before ageing for 22 months in French oak. The result is a balanced, structured wine with excellent ageing potential and a taffeta-like mouthfeel.
