Tasting note
品鑑:酒色透亮,呈現中等偏深的紅寶石色。先是櫻桃與黑醋栗的果香跳出,接著有紫羅蘭花香及黑胡椒、肉豆蔻與薑的溫暖香料感。口感清新活潑、酒體中等,單寧細緻而不生硬,酸度帶動整體節奏,尾韻帶些香料餘溫且持久。 酒莊與田地:普魯維尼安系列專注呈現馬拉諾山谷的風土特色;葡萄園位於Prognol村的乾燥梯田,海拔約200–250公尺,朝向東南至西南,土質以粉質黏土夾石灰岩為主,田間覆草並採混合栽培系統,單位面積產量受控以換取更濃縮的果實風味。 釀造小故事:葡萄全部手採,輕柔去梗破皮後在25–28°C發酵,進行約10天的浸皮與每日定時壓帽,完成乳酸發酵後採鋼槽與瓶中熟成(有微妙橡木痕跡),以自然方式穩定並裝瓶上市。整體釀造手法偏向保存果香與結構,使酒既適合即飲也能短期陳放。 搭配建議:建議醒酒約45分鐘後飲用,配紅肉、烤鴨或略帶香料的中式菜餚都非常合拍。
Tasting Note: Bright crimson in the glass, this Valpolicella Classico Superiore opens with a perfume of ripe cherries and black currant, layered with violet and a warm pinch of black pepper, nutmeg and ginger. On the palate it is fresh and lively, dry and medium-bodied, showing fine, well-integrated tannins and a persistent, spicy finish. Producer Notes: The Pruviniano Collection celebrates fruit from the Marano valleys—historically known as “Pruviniano”—and aims to express the local character with clarity and elegance. Vineyard: Vines are planted on dry terraces around the hamlet of Prognol at 200–250 m altitude with southeast to southwest exposures. Soils are silty-clay with calcareous pockets; modest yields (about 20 hl/ha), grassed vineyard floors, and mixed training systems produce concentrated, balanced fruit. Winemaking: Grapes are hand-harvested, destemmed and gently crushed. Fermentation is temperature controlled (25–28°C) with a ten-day maceration and regular punching down. The wine completes malolactic fermentation, sees maturation (with subtle oak influence reported) and is finished in steel and bottle with natural stabilisation. The result is a precise, food-friendly red with spicy lift and refined tannins. Serve: Decant for about 45 minutes and serve slightly below room temperature. Excellent with roasted or grilled red meats, game and richer Chinese dishes.
