Tasting Note: Deep, intense colour with a nose that opens to ripe black fruit, liquorice, spice, and roasted coffee. On the palate the wine is full-bodied and vinous, supported by super-ripe fruit, a touch of pepper and well-integrated yet assertive tannins. Ends on a long, structured finish with notes of bitter chocolate and cedar. Producer Notes: From Château Clerc Milon, a classified Fifth Growth in Pauillac, this 2005 shows the hallmark power and precision of the estate. The vintage produced concentrated, stylish tannins and exceptional ageing potential; the wine was described by the château as still young but very promising. Winemaking Notes: Hand-harvested between 21 September and 6 October in ideal conditions, the wine was matured in oak for about 14 months. Careful extraction preserved ripe fruit while building a structured spine from firm but polished tannins. Vineyard Notes: Planted on gravel and clay-limestone soils typical of Pauillac, the vines endured an unusually dry 2005 growing season that yielded smaller berries and concentrated flavours. The gravelly terroir contributes lift and structure, while clay-limestone adds depth. Service & Food: Decant for about an hour to let the tannins open. Pair with rich red meats — steak, lamb or game — and mature cheeses like cheddar for a classic match.
