品飲筆記:1981 騎士酒款成熟穩重,入口先是濃郁的黑色果實與李子香氣,隨即展現煙草、雪茄盒與陳年皮革的層次,並帶有泥土、松露與礦物感,收結細緻且餘韻悠長。 酒莊概況:騎士酒莊位於雷奧尼昂,世代重視平衡與品質,自 Bernard 家族接手後由 Olivier Bernard 維持一貫的精緻風格,既尊重傳統也重視分區選果。 葡萄園與採收:酒園坐落於礫石覆蓋的黏土礫石基底,土壤透氣且排水良好。採用手工分箱採收,田間與釀前多次篩選,確保進廠果實健康且成熟度一致。 釀造與陳年:以分區發酵與精細萃取為理念,長時間木桶陳年(約16–20個月,35% 新桶)並進行酒泥攪動以豐富口感。建議開瓶前輕柔醒酒約30–60分鐘,以保留細緻的發展香氣。 口感提示:中高單寧仍在,酸度支撐良好,質地圓潤,適合搭配紅肉、野味或陳年硬質起司。

Tasting Note: Mature and composed, the 1981 Domaine de Chevalier shows concentrated dark fruit—blackcurrant and plum—framed by tobacco, cedar and well-developed leather. Earthy and truffle-like undertones mingle with graphite and dried herbs; spice and cigar-box oak persist on a long, refined finish. Producer Notes: Domaine de Chevalier, run by the Bernard family under Olivier Bernard's guidance, is one of Pessac-Léognan’s reference estates. Its history stretches back centuries and the wines are celebrated for balance, elegance and ageing potential. Vineyard & Harvest: Sited on gravel over clay-gravel subsoil in Léognan, the estate practices careful hand-harvest and multiple sorting passes. The terroir lends mineral lift and structure to the wine. Winemaking & Ageing: Traditional vinification with strict plot selection and attentive extraction, followed by extended élevage in oak (about 16–20 months with roughly 35% new oak). Lees stirring is used to refine texture and add mid-palate weight. Service: Gently decant for 30–60 minutes to separate any sediment and allow secondary aromas to open. Serve at cellar-chilled red temperature (15–18°C).
