Tasting note

來自佛內 Santenots 一級田的成酒風貌,成熟後散發出紅果轉為森林地表、蘑菇與皮革的複雜氣息,並帶有細緻辛香。入口中等飽滿,酸度清爽但不搶戲,單寧柔順如絲,整體口感偏向內斂與優雅,餘韻乾淨且綿長。酒莊小而專注,採人工採收並以傳統小槽發酵、在法國橡木桶中陳年,追求展現田塊特色而非過度烘托木味。Santenots 的石灰黏土土壤與南向坡位,配合較低產量與成熟的葡樹,帶來集中度與礦物感。建議醒約半小時,和烤鴨或野味一起會很合拍。

A refined Premier Cru from Santenots showing mature, tertiary complexity. Aromas of red cherry and wild strawberry give way to forest-floor, mushroom and a hint of leather; a savory spice thread runs through. On the palate it is medium-bodied with an elegant acidity and silky, well-integrated tannins, finishing clean and persistent. Producer notes: crafted by a small family domaine in Volnay using traditional methods — manual harvest, fermentation in small vats and élevage in French oak casks — aimed at expressing site character rather than overt new oak. Vineyard notes: Santenots sits on the limestone-clay slopes at the Volnay/Meursault border, where moderate yields and older vines bring concentration and mineral lift. Best enjoyed now with a short decant to open its layered, tertiary aromas.
