Tasting note

來自著名聖艾美濃酒莊的二軍之作,2021 年版量產稀少,酒體中等偏緊,整體感覺乾淨利落。香氣帶有黑胡椒與地中海灌木香(garrigue),伴隨礦質感與成熟的紅黑莓果與煙草氣息。入口活力十足,爽朗的酸度推動果味向前,細緻卻有存在感的單寧為口感增加結構與層次,尾韻帶些微烘焙與香料感,餘韻悠長。釀造上採用嚴格的分選與控溫發酵,之後以法國橡木桶熟成約18個月,口感既適合近期飲用(建議醒酒一小時),也具短中期陳年潛力。這支酒適合配羊肉、牛排或帶一點燒烤風味的料理,口感配搭彈性大。

Le Petit Cheval 2021 is the second wine from an illustrious Saint-Emilion estate. Limited production (c.12,000 bottles) and an unusually cabernet-forward composition give it a clear, structured profile. On the nose: peppery spice, salty‑mineral and garrigue notes, with layers of red and black plum fruit, redcurrant preserves and dusky tobacco. The palate is medium-bodied, bright and focused: lively acidity frames polished, slightly chewy tannins and a silky mid-palate. A subtle roast/espresso character and a savory, peppery lift carry into a persistent finish. Winemaking follows estate precision — carefully sorted fruit, fermentation in controlled vats, and 18 months maturation in French oak — producing a refined, age-worthy wine that drinks well with an hour of decanting and will reward short-term cellaring.

Chateau Cheval Blanc is one of Bordeaux's iconic estates, renowned for meticulous vineyard management and elegant, terroir-driven wines.
