在香檳區的小型莊園，最常見的故事，是家庭世代務農，向大型香檳品牌出售葡萄。
由 Maxime Ullens 白手起家創立的 Domaine de Marzilly，卻完全不是這一回事 : 來自比利時的建築師 Maxime Ullens ，本來是負責維修一幢位於香檳區最北邊的 Massif de Saint-Thierry 的城堡，越看越喜歡乾脆直接買下來，於2012 年開始投身鑽研香檳的路。
他在 Avize (香檳區內的小鎮) 學習釀造，並在2016 年第一次收成。他的釀造方法完全不受傳統的束縛。與傳統使用不鏽鋼桶發酵，盡量保持新鮮和葡萄酸度的方法不同。他由第一次發酵已經堅持在橡木桶進行，釀造出更濃縮、更加結構、更有張力的香檳。 雖然成本很高，但 Max 堅持只出產最高品質的香檳，甚至連橡木桶的木材，也是來自 Domaine de Marzilly 自己的樹林。
也因為種種堅持令他在首年份推出不久後就被注意到，葡萄酒指南 Gault & Millau 將 Maxime Ullens 評為“2020年度釀酒師”，Bettane+Desseauve 也隨即在2021年將他列入“Genius Of Tomorrow”的名單。
目前 Domaine de Marzilly 有兩款香檳:
Brut - 80% Pinot Meunier，20% Chardonnay，是一款活潑果香的，清脆平衡的香檳。
“LPM” - 100% Pinot Meunier，帶有由木桶氧化帶來的富士蘋果香氣，複雜細緻。
還有一款產量極低，由100% Pinot Meunier 釀造的白葡萄酒 Coteaux Champenois Blanc

Tasting note
品飲筆記：初聞帶有紅櫻桃與野莓的清雅果香，伴隨花瓣般的香氣和一抹細緻辛香與泥土氣息。入口屬輕至中等酒體，酸度明亮，單寧柔順而細緻，口感絲滑，尾韻優雅持續，適合喜歡精緻淡雅風格的人。 酒莊與生產：Domaine de Marzilly 是一間重視風土表現的小莊，針對每一塊地的特性小心管理，追求自然與平衡，讓酒款呈現清新與地塊的個性，而非過度萃取。 釀造工藝：採用溫和的發酵與細緻的接觸時間以保留香氣，並透過適度的陳年與澄清處理讓結構更融合、口感更圓潤。整個流程以保留純淨果味與鮮活酸度為主。 葡萄園環境：葡萄來自Coteaux Champenois的山坡園地，屬涼爽大陸性氣候，土壤帶有香檳區典型的礦物感。低產量與精耕細作讓果實集中，酒液因此展現清爽酸度與細膩的風土印記，喝起來既輕盈又有深度。
Tasting note: Lifted, perfumed aromatics open with red cherry, wild raspberry and a hint of rose petal, followed by subtle underbrush and spice. On the palate the wine is light-to-medium bodied with lively acidity, fine-grained tannins and a silky texture that carries a persistent, elegant finish. Producer notes: From Domaine de Marzilly’s Ullens cuvée, this Coteaux Champenois rouge expresses a sense of place — restrained, aromatic and precise. The domaine works to highlight freshness and terroir character rather than overt extraction, aiming for wines that drink with immediacy and charm. Winemaking notes: Fermentation and élevage are handled with gentle extraction to preserve aromatics and texture. Lees contact and careful maturation refine the palate without overpowering the wine’s delicate perfume, resulting in a balanced profile with integrated structure. Vineyard notes: Sourced from parcels in the Coteaux Champenois, the vineyards benefit from the cool continental climate of the Champagne region and soils that lend mineral drive. Low yields and attentive vineyard work help concentrate flavor and maintain vibrant acidity, producing a red that is light, refined and terroir-driven.
