Tasting note

品飲筆記:酒體深邃,先以黑莓與黑醋栗的濃郁果香打開,隨後浮現煙燻、雪茄盒、甘草與一抹黑松露的複雜香氣。口感飽滿多汁,清晰的酸度帶出果實的鮮活感,而單寧雖細緻滑順,卻會逐步堆疊,給予良好骨架與張力。橡木香與香料細緻地包裹尾韻,餘韻悠長。 酒莊與葡萄園:傲雲由 Moët Hennessy 投資經營,位於香格里拉高海拔產區,葡萄分佈於314個小地塊、近28公頃,海拔介於2200到2600米之間。坡地陡峭,當地農民世代耕作,採用人手採收以保存傳統與果實完整性,山區晝夜溫差與氣候讓果味精緻有層次。 釀造工藝:釀酒師為適應高海拔低氧環境,調整了發酵與浸皮方式——加強曝氣、延長浸皮時間(視地塊與年份而定),部分採用新橡木桶與透氧陶罐進行乳酸發酵,並減少二氧化硫用量。以約15個月的橡木陳年完成,造就香氣與結構的細緻融合。 飲用建議:建議醒一小時讓香氣層次完全展開。搭配烤羊、燒烤紅肉或風味濃郁的菇類料理最為合拍。

Tasting note: Deep, perfumed aromatics of blackcurrant and blackberry lead, layered with graphite, cigar-box spice, smoked tobacco and a hint of black truffle. The palate is concentrated and juicy, balanced by bright, precise acidity and silky but building tannins that give structure and tension. Toasted oak and subtle liquorice frame a long, lingering finish. Producer & vineyard: Owned by Moët Hennessy, Ao Yun is a high-elevation project in Shangri‑La, Yunnan. Fruit is sourced from 314 plots across nearly 28 hectares at 2,200–2,600m altitude on steep, traditionally farmed mountainsides; hand-harvesting preserves quality and local practices. The 2019 bottling is a blend from several village sites, reflecting cold nights and a long ripening season similar to Bordeaux. Winemaking & ageing: Winemaker Maxence Dulou adapted techniques for very low-oxygen, high-altitude fruit—more aeration during maceration, extended maceration lengths by site and vintage, malolactic fermentation partly in new barrels and oxygen-permeable earthen jars, and reduced SO2. The wine spends around 15 months maturing in oak, resulting in integrated spice and polished structure. Serve after decanting for about an hour to let aromatic layers open. Matches beautifully with roasted lamb, grilled red meats and rich mushroom dishes.

Ao Yun is a high‑altitude wine project in Shangri‑La, Yunnan, developed by Moët Hennessy to express a remote mountain terroir. Working with local growers across many small plots, the team focuses on hand-harvested fruit and site-specific vinification to craft ageworthy, terroir-driven wines under the supervision of winemaker Maxence Dulou.
