Ares is the flagship expression selected from the best Barossa parcels each year. The 2009 vintage opens with a powerful bouquet of concentrated blackberry, plum and black cherry, layered with dark chocolate, espresso, cedar and a streak of cracked black pepper. On the palate it’s dense and generous yet controlled — plush core fruit balanced by firm, fine-grained tannins and integrated oak. Savory, smoky nuances and leather emerge with air, leading to a very long, saline-tinged finish. Made as a small-batch, site-selected wine, it sees careful extraction and maturation in high-quality oak to build structure and complexity. Best decanted for about an hour to let tertiary notes and spice unfurl. Ares pairs beautifully with robust red meats, game and aged cheeses.
