Bright and easygoing, the 2023 Domini Veneti Bianco di Custoza is built for light, convivial dining. Aromas are delicate and fresh with hints of green apple, citrus peel and subtle floral lift; the palate is dry, crisp and savory with a slightly bitter, mineral-tinged finish. Produced by Domini Veneti under the ownership of Cantina Valpolicella Negrar, fruit is hand-harvested between late September and early October and gently crushed. Fermentation takes place without skins at controlled temperatures (14–16°C) and the wine is kept and matured in stainless steel to preserve freshness. The vineyards lie in the productive Custoza zone south of Lake Garda on morainic soils—sandy with a limestone presence—planted at 3,000–4,000 vines/ha, with vine ages between 15 and 25 years and training by single-sided pergola and row. Ready to enjoy young, serve chilled; a short 10–15 minute aeration can help the aromatics open.
