卡農 2022 來自著名的石灰岩高原,田間與酒窖都以細緻管理聞名。第一口是春日花香與紫羅蘭,隨之而來的是飽滿的紅寶果和黑櫻桃,帶有甘草、森林下層氣息與一抹香木。口感柔滑,酒體有份量但不笨重,核心帶有清晰的礦感與鹹味,酸度活潑讓整體更有張力。單寧細緻而有支撐力,法國橡木(18 個月,50% 新桶)提供結構但不蓋掉風土。莊園強調人工分選與重力流發酵的溫柔處理,2024 年起取得有機認證,田地、種植與釀造以呈現風土為宗旨。建議醒酒一小時以上,慢慢品會更顯層次,收藏潛力強。

This is a refined Saint-Emilion Grand Cru from an estate renowned for its limestone plateau and meticulous, plot-by-plot work. Aromas open to a bouquet of spring flowers and violets layered over deep red and black fruit — cherry, kirsch and ripe plum — with hints of licorice, forest floor and subtle cedar. On the palate the wine shows a silky, enveloping texture underpinned by an electrifying, chalky core and lively acidity. Tannins are finely grained and polished, supported by French oak (18 months, 50% new, including four tuns) that gives structure without overwhelming. The finish is long, saline and mineral, inviting both near-term enjoyment after careful decanting and extended cellaring. Winemaking stresses gentle handling — manual sorting, gravity-flow fermenting rooms and precise élevage — while the domaine’s recent move to organic certification (from 2024) highlights an emphasis on terroir expression.

Chateau Canon sits on a limestone plateau in Saint-Emilion and has been under Chanel ownership since 1996. The estate covers some 34 hectares and focuses on meticulous plot-by-plot work, manual sorting and a gravity-flow cellar to handle grapes gently. Recent moves include organic certification for its vineyards. Aging is carried out in French oak for 18 months with half the volume in new barrels and the use of several large tuns to balance freshness and structure.
