Tasting note
Bright, terroir-driven white from the Côte d'Or showing a poised balance of freshness and texture. The nose opens with lemon peel, white orchard fruit and delicate white flowers, framed by toasted brioche and a whisper of vanilla. On the palate it is silky and layered — ripe stone fruit and citrus are carried by a chalky mineral spine and lively acidity. Gentle oak and subtle creamy notes add depth without overpowering the natural precision. Elegant, food-friendly and built to drink now with 30 minutes of air or to cellar for a few years. Producer notes: Thomas Boccon focuses on expressing Côte d'Or terroir with restrained élevage and careful selection. Small-batch lots are handled to preserve freshness and detail while adding texture through lees ageing. Winemaking: Grapes are harvested and sorted, gently pressed and fermented primarily in French oak (a portion in new oak), with some élevage on the fine lees and partial malolactic conversion to lend creaminess and roundness. Minimal racking preserves aromatics and minerality. Vineyard: Fruit comes from Côte d'Or parcels with limestone-rich soils and good exposure. Low yields and attentive viticulture promote concentration and clarity, resulting in a wine that marries ripe fruit with stony, saline notes.
