Description

Bollinger's NV Brut Special Cuvée is a blend of 60% Pinot Noir, 25% Chardonnay and 15% Pinot Meunier, and the grapes are mostly (more than 85%) sourced in Grand Cru and Premier Cru villages. The majority of the Special Cuvée is reserve wines, part of which have been aged in magnums for five to 15 years. The disgorgement I tasted in May 2018 displays an intense golden-citrus color and has a refreshing, concentrated bouquet of citrus fruits, sweet cherries, ripe apples, white flowers, toast, walnuts, ripe apricots and peaches, with just a touch of brioche. On the palate, this is an intense, very elegant and refined cuvée with a very long, refreshing, intense, aromatic and salty finish. This is an excellent Champagne with a beautiful chalky texture in the aftertaste.

Tasting note

這款代表作出自經典香檳酒莊,色澤帶迷人的金黃,泡沫細緻如絲。聞香有烘焙麵包、焦糖堅果與成熟梨、蘋果及柑橘皮的層次;入口則是奶油般的泡感與圓潤的果實,隨後以微鹹的礦物感和爽脆酸度收尾。酒莊仰賴大量舊年份儲備酒(其中部分以大酒瓶陳年多年)與部分橡木桶發酵,讓酒體在豐富與優雅間取得平衡。喝的時候建議充分降溫,開瓶後靜置短短幾分鐘即可,搭配海鮮或多款開胃小菜都相當合拍。

A benchmark non-vintage Champagne from a house with deep cellar reserves and a long tradition. On the eye it shows a medium golden hue with a very fine, persistent mousse. The nose opens to layered aromas of ripe apple and pear, stone fruit, citrus zest and complex bakery notes — brioche, toasted hazelnut and subtle vanilla from oak ageing. The palate is generous yet chiselled: creamy, velvety bubbles carry flavours of pear, baked apple, light spice and a saline, chalky minerality. Extensive reserve wines (some aged in magnums for 5–15 years) and careful oak influence give it weight and the capacity to age, while lively acidity keeps the cuvée fresh and food-friendly. Serve well-chilled; no formal decanting required — just pour, let it settle for a few minutes and enjoy.
