Tasting note

品飲筆記:色澤明亮,果香豐富且有份量,前段帶出熟成的熱帶與核果香,柑橘皮的清香點綴其中。入口圓潤飽滿,但鮮明緊緻的酸度一路拉住味覺,帶來俐落的收尾與些許礦感。生產者說明:此款為威廉費爾在智利的高海拔系列,取自2007年栽植、位於Alto Maipo約800公尺的山坡地塊,土壤以崩積與沖積層為主。釀造重點:為保留果實原貌與鮮活感,酒款沒有進行木桶熟成,多以不鏽鋼容器發酵與低溫掌控,強調純淨果香與酸度結構。葡萄園筆記:高海拔與晝夜溫差、良好排水的山坡土壤,賦予果實集中度與明快酸度。建議略為醒20分鐘或短暫回溫再飲,最適合搭配香料風味小吃、酥炸海鮮或椰香咖哩等具有東南亞風味的菜餚。

Tasting note: Bright, succulent and unusually powerful for its price point, this white shows ripe tropical and stone fruit layers with citrus zest on the nose. The palate is enveloping and slightly sweet up front but kept taut by firm, persistent acidity and a clean mineral thread. Producer notes: Made by William Fevre’s Chile project from high-altitude sites in the Alto Maipo area, the 'Espino' selection comes from vineyards planted in 2007 on colluvial and alluvial soils at around 800 m elevation. Winemaking: Fermented and rested without barrel ageing to preserve primary fruit expression and energetic freshness; careful temperature control yields clarity and lift. Vineyard: High elevation, well-drained soils and a marked diurnal range lend concentrated fruit and crunchy acidity. Serve slightly chilled and allow about 20 minutes to open — it rewards brief breathing. Food pairing: equally at home with roast poultry, Asian spicy fried starters, and richer coconut-based seafood curries.

The Espino project focuses on cool, high-elevation sites in Alto Maipo to craft expressive, site-driven whites. Selection of plots planted in 2007 on colluvial and alluvial soils, meticulous vineyard management and restrained winemaking (no barrel ageing here) aim to showcase purity of fruit, bright acidity and mineral detail.
