Tasting note

傲雲2018出自香格里拉高海拔的山坡地，酒體豐滿卻不厚重，帶有黑莓、黑醋栗與深色李子的果香，並伴隨泥土、墨香和暖香料（丁香、百里香、雪松）的複雜氣息。口感以清爽的高山酸度為骨幹，單寧細緻如絲，層次分明、回味悠長。酒莊由Moët Hennessy擁有，釀酒師Maxence Dulou領軍，葡萄園由314塊地塊組成，海拔約2,200–2,600米，當地農戶沿襲世代耕作習慣，全部以人工採收。釀造上為了補償高海拔低氧，增加浸皮時的曝氣、視產地與年份延長浸皮時間，施行新桶與透氧陶甕做乳酸發酵並減少二氧化硫使用，最後橡木桶陳釀約15個月。建議醒瓶一小時，能更快展現香氣與層次。餐配上烤羊排、烤牛排、野味或帶菌菇的料理最合拍。

2018 Ao Yun is a powerful, refined mountain wine from Shangri‑la, showing layered dark fruits (blackberry, cassis and plum) with an undercurrent of earth, ink and spice—clove, thyme and cedar—plus a mineral lift. The palate is full-bodied and vertical: bright high‑altitude acidity balances fine, well-integrated tannins and a savoury, persistent finish. Producer notes: owned by Moët Hennessy and overseen by winemaker Maxence Dulou, Ao Yun is made from 314 plots across nearly 28 hectares at 2,200–2,600 m. Vineyards are hand‑worked by local communities with traditional knowledge. Winemaking: maceration and aeration adapted for high altitude, prolonged skin contact where appropriate, malolactic fermentation in new barrels and oxygen‑permeable earthen jars, reduced SO2 and 15 months élevage in oak. Serve after about an hour’s decant to reveal layered aromatics. Pairs beautifully with roast lamb, grilled red meat, game or mushroom dishes.
