This 2021 from Domaine Paul Jaboulet Aîné’s Domaine de Saint Pierre channel Cornas’ signature intensity: a bold, full-bodied wine with layers of black pepper, smoked notes and intense licorice that roll into dark fruit and savory mineral undertones. The fruit comes from high-altitude vineyards (around 400 m) farmed organically, with yields deliberately reduced to concentrate flavour — total production was small at 5,288 bottles. Fermented and matured in oak, the wine shows polished, velvety texture alongside firm structure. At 13% ABV and closed with cork, it is approachable now with decanting but will best reward short-term cellaring (peak 2025–2037). Ideal with roasted lamb or hearty, charred meat dishes.
