A focused Grand Cru from Grenouille showing classic Chablis energy: bright lemon and green apple aromas lift from the glass, followed by wet-stone and chalky minerality. The palate is tense and detailed, driven by crisp acidity, a saline thread and concentrated mid-palate that evolves to a long, stony finish with a hint of almond and honey with time. Domaine Testut works parcel-by-parcel in Grenouille, keeping yields low and harvesting by hand. Fermentation is careful and elevated on fine lees with neutral vessels and older oak to preserve terroir expression rather than oak character. The Kimmeridgian limestone soils—rich in marine fossils—lend the wine its signature flinty, saline core. Serve well-chilled and allow about 30 minutes of airing for the aromas to settle. Excellent with oysters, lobster or richer shellfish, and soft-ripened cheeses.
