品飲筆記：2011 年卡龍世家呈現深沉的黑果香，黑加侖、李子與成熟櫻桃交織，細緻紫羅蘭與香料、雪松的木質感伴隨出現。入喉飽滿且有層次，單寧細緻但有支撐力，酸度明亮使酒款保持清晰，餘韻悠長帶些礦物與皮革氣息。 酒莊與產區：卡龍世家為列級酒莊（3ème Grand Cru Classé），風格追求優雅與內斂的力量，歷年表現出良好的陳年潛力與風土一致性。 釀造方式：採摘以人工為主，田間初篩後回廠以震動機械分選並再做人工挑選；溫控不鏽鋼發酵槽中進行 18–21 天浸皮，傳統蛋白（蛋清）澄清處理，之後以 100% 法國新橡木桶陳年 20 個月，顧問釀酒師為 Eric Boissenot。 葡萄園特色：園址覆蓋厚厚的第四紀礫石層，下為第三紀黏土—頂層並含湖相黏土，排水與蓄水兼具的土壤讓果實能集中而不失鮮活感。整體風格既有礫石的礦質與力度，也保有細緻的口感表現。 口感建議：建議醒酒一小時左右，入口先是豐富果味，接著細緻單寧緩步展開，酸度讓口腔保持清爽，收尾悠長且令人回味，特別適合搭配紅肉與熟成奶酪。

Tasting Note: Deep, nearly black core with an aromatic bouquet of blackcurrant, blackberry, plum, violet and subtle orange zest; cedar, baking spice and tobacco emerge with time. On the palate it is concentrated yet refined — ripe dark fruit framed by integrated new oak, fine-grained but assertive tannins and a lively acidity that carries a long, mineral-tinged finish. Producer Notes: The Grand Vin of Calon-Ségur aims for rarity and balance: delicacy married to intensity, with a Cabernet-led finesse and impressive aging potential. Classified 3ème Grand Cru Classé, it is celebrated for its purity of flavour and elegant structure. Winemaking Notes: Hand-picked fruit is first sorted in the vineyard, then mechanically and hand-sorted in the winery. Fermentation occurs in temperature-controlled conical stainless-steel tanks with maceration for 18–21 days. The wine is fined with egg white and aged for 20 months in 100% new French oak barrels, under the guidance of consultant Eric Boissenot. Vineyard Notes: Vines are planted on a thick Quaternary gravel layer over predominantly Tertiary clay sub-soils; at the top of the gravel deposits a fine lacustrine clay layer adds water retention and depth. This terroir delivers the classic Saint-Estèphe combination of structure, minerality and concentrated fruit. Cellaring & Serving: Drinking window extends across decades; best enjoyed now with some aeration to show aromatic lift, or cellared for further development. Serve slightly below room temperature after decanting.
