Tasting note

來自泰勒坡口一塊向陽的乾旱老藤園,這款酒散發紅、藍果的清新果香,帶有花香提振,並以橄欖泥與林間苔蘚的鹹香作為背景。手工採收後低溫浸皮五天,靠自然酵母發酵並保留整串發酵的成分,12個月法國橡木桶熟成(35%新桶),再在槽中靜置整合風味。口感中等偏輕、酸度明快,果實濃度與細緻單寧平衡,收尾帶有溫暖的餘韻與鹹香感,適合稍微醒酒後佐以鴨、香煎鮭魚或菇類料理。

A focused, site-driven release from a dry‑farmed north‑facing slope in Taylor Pass. The bouquet moves between tart red and blue fruit with floral lift and a counterpoint of olive‑tapenade and forest moss — an intriguing savoury thread that runs through the palate. Cold‑soaked and fermented on native yeasts with some whole‑cluster inclusion, the wine was matured 12 months in low‑toast French barriques (35% new) then rested in tank. Texturally it’s medium-bodied, bright and precise: lively acidity frames concentrated fruit while gentle, structured tannins give shape without weight. Drink now with a short decant to open the aromatics, or cellar for a few years to see the savoury notes broaden.

Blank Canvas Wines is run by Matt Thomson and Sophie Parker‑Thomson, a small, attentive team focused on expressing individual sites. Their Escaroth bottling comes from a tiny, old‑planted block (est. 2001) on a steep north‑facing clay slope in Taylor Pass, dry‑farmed and spur‑pruned with VSP training. The emphasis is low yields and minimal intervention: hand harvest, native fermentations, gentle extraction with some whole clusters, and French oak ageing to add texture rather than dominate. The result is vineyard transparency and a wine that reflects season and site.
