A saline minerality and gentle creaminess on the mid-palate give it body and texture while a lively, balanced acidity keeps the wine fresh. Expect a persistent, slightly savory finish that makes it versatile at the table. Producer notes: From the Bila-Haut estate under the M. Chapoutier umbrella, this cuvée reflects careful viticulture on steep, sun-baked slopes near the sea. The estate, run by Michel and Marc Chapoutier, focuses on capturing terroir expression while respecting vineyard health. Winemaking notes: Grapes are hand-harvested, gently pressed and fermented at cool temperatures to preserve aromatics. The wine typically sees careful élevage—short time on fine lees to build texture—under low-intervention regimes to maintain clarity and freshness. Vineyard notes: Vines are planted on steep terraces with schistose soils and strong Mediterranean influence.
