Tasting note
品飲筆記:酒液呈現深寶石紅,帶紫色邊緣。香氣豐富,黑果成熟感明顯,夾帶迷迭香式的林間草本與黑胡椒香,香料感十足。口感一開始飽滿有力,單寧緊緻卻不生硬,觸感偏絲滑;橡木的香草與甘香為果味增添層次,尾韻悠長且帶點飄渺的餘味。
酒莊與葡萄園:由沙普提亞家族監製的上比拉園,葡萄園坐落於黏土、含鈣石灰與頁岩地帶,土壤結構讓果實能累積豐富的礦物感與日夜溫差的風味。所有果實採摘皆以人工進行,重視果實完整與分選。
釀造與陳年:釀造過程以傳統人工下帽(punch-down)進行萃取,長時間浸皮至少四週以帶出深度與單寧,之後100%在橡木桶中陳年18個月,造就飽滿酒體與香料、木質的和諧感。
建議醒酒45–60分鐘,溫度控制在16–18°C,搭配烤羊肉、炭烤牛排或成熟硬質起司都很合適。
Tasting Note: Deep garnet in the glass with purple highlights. On the nose it opens generously to ripe black fruits—blackberry and elderberry—woven with savoury garrigue and peppery spice. The palate delivers a powerful entry with rich, concentrated flavors, tight yet silky tannins and notable oak-derived complexity. The finish is long, spicy and somewhat ethereal.
Producer & Vineyard: From the Bila-Haut estate under the Chapoutier stewardship, this cuvée is sourced from plots rooted in clay, calcareous soils and schists. Grapes are hand-harvested to preserve quality and precision.
Winemaking & Ageing: Extraction relies on punching down the cap during an extended maceration of at least four weeks, followed by 18 months' ageing 100% in barrels. The result is a structured, oaky expression with layered spice and fruit concentration.
Serving Suggestion: Decant for 45–60 minutes to let the aromatics open and the tannins soften. Serve at 16–18°C. Matches proudly with grilled or roasted red meats, charred ribs, and aged cheeses.
