This 2012 Blanc de Blancs from Champagne Pierre Bertrand presents a crystalline, age-refined profile: a fine, persistent mousse carries bright citrus (lemon zest, grapefruit) and green apple up front, while autolytic notes of brioche, toasted almond and light honey emerge with air. The palate is lithe and focused — vivid acidity balanced by a saline, chalky minerality and a medium-long, cleansing finish. Made in the traditional method with extended lees ageing and a Brut dosage, it reflects careful cellar work and an emphasis on terroir expression. Serve well-chilled; a short 20–40 minute opening or gentle decant brings forward the secondary pastry notes and softens the edges for pairing with shellfish, sashimi or creamy, lightly fried dishes.
