來自秩父蒸餾所的 Wine Wood Reserve,是 Ichiro Akuto 的手作純麥酒款,特色在於以曾陳放過葡萄酒的酒桶熟成,帶出果乾與細緻單寧。聞香有成熟莓果、香草、烤橡木與一絲煙草;入口飽滿,麥芽甜、焦糖與溫和香料相互堆疊,尾韻帶巧克力、可可粉與持久的橡木香。生產上以小批次、手工管理為主,蒸餾所座落於東京西北約100公里的山間,四季溫差大、泉水清冽,這些環境讓酒款在酒桶中發展出更豐富的層次。建議先醒約15–30分鐘,或加一點礦泉水慢慢賞味,適合配煙燻與味道濃郁的下酒菜。
A refined Japanese pure malt from Ichiro Akuto's Chichibu program, the Wine Wood Reserve is matured with a strong influence from wine-seasoned casks. On the nose: ripe dried berries, toasted oak, warm vanilla and a hint of tobacco. The palate opens with rich malt sweetness layered with winey fruit, caramel and baking spice, finishing long with lingering oak spice and cocoa notes. Producer notes: Ichiro Akuto, grandson of the Hanyu founder, established Chichibu in 2007 where pronounced seasonal swings and pure spring water shape the whiskies. Production notes: small-batch, hands-on distillation and careful selection of wine-seasoned barrels give pronounced fruit and tannic lift without overwhelming the malt character. Vineyard/cellar notes: barrels previously held fortified and red wines, contributing dried-fruit and tannin complexity. Serve slightly chilled or with a splash of water; decant 15–30 minutes to let the wine-cask aromas open.
