品飲筆記:酒色深沉,前段散發濃郁的黑莓與黑櫻桃香,中段轉為紫羅蘭香氣與黑胡椒、煙燻肉香,礦物感與細緻的橡木香緊緊相扣。口感飽滿,酸度明快帶動酒體,單寧緊緻卻圓潤,收結清透且回味悠長。 酒莊與葡萄園:此酒來自小山頂教堂周圍的「Ermite」園,葡萄樹齡約八十年,生長在貧瘠的花崗岩土壤,養分有限反而促進果實濃縮與礦物表現。酒莊由沙普提亞家族經營,重視自然與生物動力法的管理理念。 釀造與陳年:以人工晚採確保成熟度,全部去梗,僅採用自由流出汁液,於混凝土槽進行約四週發酵並嚴格控溫(不超過32°C),以取得柔和穩定的單寧。入桶陳年18–20個月,使用新桶與一年份桶混用,提升結構與層次。 飲用建議:年輕飲用請先醒1.5–2小時,建議置入酒窖陳放至成熟期後享用,配重口味烤肉與燉煮料理最為合適。
Tasting Note: Deep, brooding color with intense notes of ripe dark berries, black cherry and a lifted violet perfume. Layers of cracked black pepper, smoked game, graphite and discreet new-oak spice build into a concentrated palate that remains vibrant and precise. Tannins are dense but finely grained, delivering structure without harshness, and the finish is long and crystalline. Producer & Vineyard: L'Ermite comes from vines planted around the little chapel at the top of the Hermitage hill. The plot sits on very poor granitic soils and the vines average around 80 years old—conditions that yield remarkable concentration and mineral definition. The estate is run by Michel and Marc Chapoutier, with biodynamic approaches applied in many plots. Winemaking & Ageing: Hand-harvested late for optimal phenolic ripeness, the fruit is 100% destemmed and vinified using only free-run juice. Fermentation proceeds in concrete tanks for about four weeks with strict temperature control (not exceeding 32°C) to extract gently and shape stable, harmonious tannins. The wine is matured for 18–20 months in new and one-year-old casks. Cellaring & Service: Best cellaring window begins in the early 2030s, but if enjoyed young allow a long decant (90–120 minutes) to open up. Serve slightly below room temperature (16–18°C).
