品飲筆記:1988 年的卓龍夢特已進入成熟期,酒體中段飽滿,帶有黑櫻桃、李子與陳年橄欖醬(tapenade)般的鹹香,隱約的煙燻與香草木桶味為果實添上深度。單寧經長時間陳放已趨柔和,酸度仍保有活力,整體結構平衡,口感層次豐富且回味悠長。
酒莊與田地:酒莊座落於產區最高點,360° 日照與複雜土壤造就特殊風土,生物多樣性長期受到重視,葡萄在此環境中穩定成熟,帶出礦感與鮮明的地塊個性。
釀造手法:以約 18 個月的橡木桶熟成為主,避免過度干預,讓果香與木質香融合成有精緻度的表現。多年瓶陳讓原本緊致的骨架變得圓潤,口感更為綿密。
飲用建議:開瓶後建議醒 30–60 分鐘(約 45 分鐘最佳),避免強烈搖晃以保留細膩香氣。推薦與烤或燉的紅肉、羔羊、野味或以菇類為主的濃郁料理搭配。


Tasting note: Now at a mature, graceful stage, this 1988 displays a plush core of plums and black cherry framed by savory tapenade, gentle smoke and vanilla from extended oak ageing. Medium-bodied and expansive on the palate, the wine shows remarkably integrated tannins and balanced acidity that carry generous, savory fruit through a lingering finish.
Producer notes: Troplong Mondot champions its unique terroir — situated at the highest point of the appellation with 360° exposure and complex soils — producing wines of aromatic richness and precise structure. The estate speaks of biodiversity and a long-term commitment to expressing site identity.
Winemaking: Matured for approximately 18 months in oak, the wine benefits from careful élevage that softens structure while preserving aromatic clarity and tension. Cellaring has smoothed youthful firmness into polished tannins and a full, harmonious palate.
Vineyard: The vineyard’s elevation and varied soil profile lend concentration and mineral complexity. Vines mature fruit steadily, giving ripe black fruit and savory, earthy layers that unfold with time in bottle.
Service: Decant for about 45 minutes to gently open aromas and separate any light sediment. Serve at 16–18°C.
Pairing: Best with roasted or grilled red meats, game, rich braises and mushroom-forward dishes.
