Tasting Note: Rich, southern French character—perfumed black cherry and plum up front, layered with blackberry, touches of garrigue and cracked black pepper. On the palate the wine shows concentrated dark fruit, warm baking spice and a savory, slightly earthy streak. Tannins are present and structured but ripe, giving firm backbone without harshness; the finish is long and gently smoky.

Producer Notes: A collaboration between Anne Gros and Jean‑Paul Tollot, this bottling channels Minervois sun and Mediterranean scrub into a focused, crowd‑pleasing style. The fruit is sourced from several local parcels chosen for stony soils and good exposure.

Winemaking Notes: Fermented with attention to preserving primary fruit, the wine typically sees ambient-yeast or selected-yeast fermentation, gentle extraction to avoid harshness, and maturation in seasoned oak and neutral vessels to add texture while keeping fruit forward intensity. The result is an approachable yet layered red that balances ripeness and savory detail.

Vineyard Notes: Parcels in the Minervois benefit from warm, dry summers and cool nights that maintain freshness. Soils are varied—often stony and well‑draining—helping concentration and structure. Viticulture tends toward low-intervention practices to reflect site character.

Serving: Best served slightly cool for a full‑bodied red (16–18°C). Decant for about 45 minutes to open aromas and soften edges. Drink now through the early 2030s.
