酒莊介紹:Klein Constantia 擁有深厚歷史,酒莊以製作經典康斯坦甜酒聞名,現由 Zdenek Bakala 與 Charles Harman 持有並以現代化管理加上傳統工藝維持品質。

釀造方式:清晨分批手採,從飽滿果粒到風乾濃縮的果實各自處理;冷浸皮漬可達兩週,稍微壓榨後入 500 公升法國桶發酵,讓酒自然停發,時間從數月到一年不等,最後短期熟成以整合風味(標示陳年約 6 個月)。

葡萄園與製程細節:每個園區獨立管理、人工採收與分級;每箱果實都有採收者代號,進入酒窖時逐一在輸送帶上篩選,確保只有最上乘的果實被使用。這種嚴謹的田間管理與精準的分批釀造造就了濃郁但平衡的甜酒特質,且極具陳年潛力。

建議醒酒與飲用:建議開瓶後靜置 30–60 分鐘(約 45 分鐘最佳),微冷飲用更能帶出果香與清晰酸度。搭配果塔、奶油類甜點或藍絲芝士風味絕佳。


Tasting note: A luminous, honeyed dessert wine with an intense aromatic bouquet of honeysuckle, candied apricot, marmalade and bright citrus peel, edged by exotic passionfruit and a touch of flinty minerality. On the palate it is richly concentrated and silky, with layers of stone fruit and honeyed sweetness kept vivid by lively natural acidity; the texture is enveloping yet precise, carrying a long, multi-layered finish.

Producer notes: From Klein Constantia, a historic estate re-established as a benchmark for Constantia sweet wines. Under the stewardship of owners Zdenek Bakala and Charles Harman, the estate combines deep respect for tradition with meticulous modern quality control.

Winemaking notes: Hand-harvested in multiple passes during the cool early hours, batches range from ripe berries to raisined grapes destined for the essencia component. Cold maceration on the skins can last up to two weeks; each parcel is pressed lightly into 500-litre barrels where fermentation is allowed to stop naturally over many months. The wine is then rested (ageing noted at six months) to integrate flavors and ensure balance between sugar, alcohol and acidity.

Vineyard notes: Vineyard blocks are managed and harvested parcel by parcel to express site-specific character; every lug box is tracked back to the picker and bunches are hand-sorted on arrival to guarantee only the best fruit enters the cellar. The result is a dessert wine of remarkable concentration, poise and ageing potential (drinking window 2023–2070).

Service: Best opened and given about 30–60 minutes to breathe (about 45 minutes recommended) to reveal layered aromatics. Serve slightly chilled.
