品飲筆記:杯中先是成熟黑果與烤漿果的香氣,緊接著可可、黑巧克力與些許煙燻、胡椒香,口感飽滿,果核濃郁而圓潤,橡木帶出香草與辛香的層次。酒體紮實,中段豐盈,尾韻以巧克力、皮革與微鹹肉香延展。 田莊與生產:來自帕德托韋(Padthaway)溫暖產區,酒莊在田間管理與採收時機上很有計畫性,務求果實成熟與單寧成熟同步,田間由Travis Coombe管理,酒莊釀酒師Ben Perkins掌舵,強調質地與平衡。 釀造重點:採溫控發酵與選擇性浸皮萃取,經新舊橡木桶熟成以增加辛香與香草調性,但不搶掉果味主軸。現在的瓶陳讓單寧更柔和、口感更圓潤,是適合慢火料理或烤肉搭配的厚實選擇。 飲用建議:建議醒酒約30–60分鐘,氣溫略低於室溫飲用,可搭配燒烤紅肉、燉羊膝或熟成起司。

Tasting Note: Ripe black cherry and stewed berry aromas open the glass, layered with dark chocolate, cocoa powder and a hint of cured meat and pepper spice. On the palate it feels generous and full-bodied — plush dark-fruit core framed by savoury, slightly smoky oak and black-pepper notes, finishing long with lingering cocoa and leather nuances. Producer & Vineyard Notes: From Two Hands’ Padthaway sources, this bottling reflects warm inland South Australian ripeness balanced by careful vineyard selection and attentive viticulture. The team led by Travis Coombe in the vineyard and Ben Perkins in the winery focus on picking for optimal phenolic ripeness and textural balance. Winemaking: Matured in seasoned and new oak which adds spice and vanilla complexity without overwhelming fruit. Fermentation and careful extraction deliver rounded tannins and a dense mid-palate; time in bottle has softened the youthful angularity while preserving intensity. Serving & Ageing: Best served slightly below warm room temperature after a 30–60 minute decant to open the aromatics. Pairs beautifully with grilled or braised red meats, game, and mature cheeses.
