Oak-driven notes of vanilla and cedar frame the palate while firm, structured tannins and lingering savory notes carry to a long finish. Producer Notes: Ares is Two Hands’ flagship, assembled from the very best parcels each vintage and named after the bold Greek god of war — a wine meant to be powerful and uncompromising in character. Ownership and direction come from Michael Twelftree with Ben Perkins guiding the cellar. Winemaking Notes: Hand-selected fruit was fermented and matured in oak to build texture and complexity. Careful extraction and élevage have balanced ripe intensity with structure; the wine was bottled under cork and has been developing in bottle since release. Vineyard Notes: Sourced from select Barossa Valley parcels—warm, sun-drenched sites that give ripe, concentrated fruit. Low yields and attentive viticulture under vine manager Travis Coombe help produce intensely flavored grapes with depth and density. Cellar & Service: Drinking window spans the current peak years; decant for about an hour to fully open the aromatics and soften tertiary tannins. Serve slightly below room temperature with robust meat dishes.
