侍酒師私房筆記:淺金帶綠,第一口先是青檸與葡柚的清脆,再慢慢轉出青蘋果、梨與一抹白色熱帶果。桶與在泥泥動作帶來微微烤榛果與奶油質感,把酸度包住但仍保持節奏感;尾段有海水般的鹹礦味,收得乾淨又耐人回味。建議開瓶後醒半小時,溫度 8–10°C 最能顯現層次。

田地與生產:這片地曾種紅葡萄,後來因春霜風險重植白葡萄。2009/2010 年起大幅改善栽培與選果,整批僅約三分之一被挑選入 Pavillon Blanc,產量稀少約一萬瓶級別。

Winery & Vineyard Notes: Produced by Château Margaux under owner Corinne Mentzelopoulos and winemaker Philippe Bascaules, Pavillon Blanc comes from an 11-hectare parcel historically replanted because of frost risk. The team tightened selection since 2009/2010; yields are low and production limited to elevate concentration.

Winemaking Notes: 100% Sauvignon Blanc. Whole-bunch pressing, fermentation and élevage in French oak barrels (minor new oak influence), bâtonnage contributes to a rounded, textural mid-palate. Maturation: 6–8 months in oak; closure by cork.

Tasting Note (sommelier): Pale gold with silver edges. Bright citrus—grapefruit, lime zest and a ribbon of lemon—sits atop green apple, pear and white tropical hints. Fine toasted hazelnut and a whisper of lychee come from gentle oak and lees work. The palate is crisp and taut, almost ballet‑like: incisive acidity, saline minerality and a creamy, slightly oily texture that carries long, saline-citrus finish.

Occasions & Service: Serve well chilled (8–10°C). Short decant (30 minutes) or open early from the bottle to reveal texture. Perfect for elevated weeknight seafood, festive shellfish platters, or as a refined aperitif at a dinner party.

Competitive Edge: Delivers château-level provenance and tension usually associated with top white Burgundies, but with a distinctive Bordeaux saline nerve and clearer citrus drive—rarer production and better value versus many white Burgundies of similar pedigree.
