品飲筆記:酒色深沉,先聞到黑莓、黑加侖與熟李子的果香,隨後浮現雪松、煙草、黑巧克力與一抹香草與樹下土質氣息。入口中段飽滿但不膩,酸度支撐整體,使果味顯得鮮明;單寧扎實而細緻,尾段帶出礦物與香料的餘韻,收束長而有層次。 酒莊與田間:嘉芙麗為聖埃美隆歷史悠久的家族酒莊,長期由同一家庭經營,重視田間管理與可持續經營。葡萄園分布在石灰岩高原與黏土石灰坡地,排水與礦物感俱佳,行間覆草、採用單/雙Guyot修剪、落葉與綠枝管理,採手工小箱採收,強調果粒成熟與健康度。 釀造工藝:採後先在7°C冷藏12小時,再以光學分選去除瑕疵果。按小地塊於不鏽鋼控溫槽發酵,採重力灌裝、人工泵轉與踩皮(punch down)處理;75%於槽中進行乳酸發酵,25%於橡木桶中完成。陳年約14個月於一到二年桶,三次澄澈轉桶(racking),呈現木質與果實的和諧。 口感建議:單寧有彈性但存在感十足,適合短期醒酒(約1小時)或進一步陳年。推薦搭配烤羊腿、紅燒牛肉、野味或帶香菇醬汁的料理,也能配陳年硬質起司。
Tasting Note: Deep ruby with aromas of blackberry, blackcurrant and ripe plum layered over cedar, tobacco, dark chocolate and subtle balsamic and underbrush notes. On the palate it is medium–full, ripe and concentrated with framed freshness, firm yet polished tannins and a long, savory finish with lingering spice and mineral threads. Producer Notes: From one of Saint-Émilion’s oldest family estates, this vintage reflects the house’s classic structure and restraint. The estate adheres to integrated farming on limestone plateau and clay-limestone hillsides, hand-harvesting into small crates and careful sorting. Winemaking: Grapes were cold-soaked for 12 hours at 7°C then passed through an optical sorter. Parcel-by-parcel vinification in temperature-controlled stainless-steel tanks with gravity filling, pumping over and punching down. Malolactic fermentation completed in tanks (75%) and barrels (25%). Aged 14 months in one- and two-year oak barrels with three rackings; finished with a balanced oak imprint and refined tannin profile. Vineyard Notes & Vintage: The estate’s 22 hectares sit on limestone and clay-limestone soils that lend minerality and structure. The 2012 growing season brought late challenges but achieved ripe skin and tannin maturity by harvest (4–16 October), producing a composed wine with good ageing potential. Serve & Pairing: Decant for about an hour. Ideal with roasted or braised red meats, game, mushroom-rich dishes and mature cheeses.
