On the palate it is crisp and linear, with racy acidity, polished texture and a saline, slightly bitter-edged finish that adds length and complexity. Made in a classically restrained style to showcase purity and terroir, the wine sees careful temperature-controlled fermentation and gentle lees contact to build mouthfeel without masking freshness. Drink now through the early 2030s; give it a short decant (about 30 minutes) to open, and pair with richer seafood, cured fish or medium-aged sheep cheeses.
