Maxime Dubuet-Boillot is a small-scale producer working from select plots within the IGP. The approach is low-intervention: hand-harvesting, native yeast ferments, and careful maturation in mainly neutral French oak to emphasize site and freshness. Small yields and precise cellar work produce wines that are lithe, aromatic and food-friendly.
