酒莊與田地：Dominus由Christian Moueix經營，堅持只用莊園果實來呈現產地特質。2007年乾爽生長季使果粒偏小、風味集中，整體給人緊緻而有深度的印象。

Tasting Note: A seamless, powerful estate wine with an intensely aromatic nose and an elegant, concentrated palate. Aromas of ripe dark cherry, pomegranate and blackberry are layered with toasted almond, blond tobacco, cedar and a hint of dark chocolate. The texture is concentrated and polished — firm but refined tannins frame bright acidity and a long, incisive finish.

Producer Notes: Dominus is an estate wine from the single Napanook vineyard, a designation the estate uses to highlight the purity and distinctiveness of its terroir. The 2007 vintage is described by the producer as profound and powerful, with articulated fruit, polished tannins and exceptional length.

Winemaking: Practice here is minimalist and meticulous — thorough hand cluster sorting, optical berry sorting, gentle pump-overs to extract aromas and structure, and hand racking barrel to barrel roughly every three months (esquive). Barrels for this vintage included about 20% new oak, contributing to the wine’s finely integrated toast and spice profile.

Vineyard & Vintage: Grapes come exclusively from the Napanook estate. The 2007 growing season was dry with cooler overall temperatures and small, concentrated berries — a profile that yields intensity rather than overt ripeness. Harvest ran from 11 September to 5 October, producing limited volumes and a wine built for both early pleasure and long ageing.

Serving & Cellaring: Best enjoyed with 60–90 minutes’ decanting now, or cellar further through the drinking window 2013–2045. Pairs superbly with richly flavoured red meats, game and aged hard cheeses.
