Tasting note: Bright, sharply focused citrus and green apple aromatics open to a core of wet stone, oyster-shell salinity and subtle almond lift. The palate is driven by brisk, steely acidity, a compact mid-palate and a clean, lingering saline finish. Producer notes: From the family domaine in Chablis, the Vaillons Premier Cru here is handled with respect for site expression—low yields and careful sorting ensure concentrated fruit and clear mineral signatures. Winemaking notes: Gentle pressing and temperate fermentations preserve primary freshness; élevage emphasizes freshness and purity with limited influence from new wood and measured lees contact to add texture without masking terroir. Vineyard notes: Vaillons sits on Kimmeridgian limestone soils giving that classic Chablis minerality—sheltered slopes that achieve ripeness while retaining tension. This vintage shows the balance between riper fruit and the vineyard’s stony backbone. Serve slightly chilled and allow 30–45 minutes after opening to reveal subtler tertiary notes. Excellent with shellfish, light fish preparations and delicate cheeses.
