Tasting note

品飲筆記:清透粉橙色,銀光閃爍。杯中先是一陣草莓、紅莓、血橙與木槿花的清新果香,接著出現細緻的麵包香與礦物、酵母氣息。口感鮮明卻不厚重,細密持久的氣泡帶來奶油般的質感,中等酒體,鮮脆的酸度把果味托起,餘韻綿長又帶一點礦感。 生產與釀造:酒莊以其年份基底調配,瓶裝前加入約一小部分的紅酒以提升果色與結構,產量有限。壓榨後進行兩次澄清(包括冷澄),低溫不鏽鋼慢速發酵、完成乳酸發酵再作最後調配,不用新橡木。瓶中二次發酵採傳統法,並在深達33米的涼濕酒窖中熟成與手工轉瓶,因此才能有如此細緻且持久的泡沫。 葡萄園與風土:主要來自蒙塔涅·德·蘭(Montagne de Reims)優良園,著重採收成熟度與結構,造就酒體的紅果厚度與清爽骨架。 搭配建議:不需醒酒,冰鎮後直接飲用風味最佳;非常適合搭配油脂豐富的魚類、煎烤鴨肝、海鮮拼盤或微甜的莓果甜點和巧克力熔岩蛋糕。這款粉紅香檳輕鬆又有質感,是宴會與慶祝的萬用選擇。

Tasting note: Pale salmon with silver highlights. Aromas of wild strawberry, raspberry confit, hibiscus and blood orange lift from the glass, layered with delicate brioche and subtle mineral/yeasty notes. On the palate it is bright and concentrated yet refined: fine, persistent mousse, medium body, creamy texture and lively acidity that carries a long, mouthwatering finish. Producer & winemaking notes: Crafted from Pol Roger’s Brut Vintage base with the addition of a proportion of still red wine, this rosé is produced in limited quantities. The musts undergo two débourbages and cool fermentations in stainless steel (kept under 18°C), followed by full malolactic conversion before the final blend. Secondary fermentation takes place in bottle using the Traditional Method and ageing continues in deep, damp cellars where remuage is still done by hand — a key reason for the wine’s very fine mousse. Vineyard notes: Fruit is selected from top crus of the Montagne de Reims, harvested for ripeness and structure to deliver the characteristic balance of ripe red fruit and tensile acidity. Service & pairings: Serve well chilled (8–10°C). No decanting needed — simply open and enjoy; lovely with seared tuna or salmon, richer fish, duck or creamy starters, and also surprisingly good with berry desserts or chocolate fondant.
