Tasting note: Highland Park 12 Year Old opens with bright Seville-orange citrus and rich dried-fruit cake, layered with cinnamon, nutmeg and clove. Beneath the spice sits waves of heathery peat smoke and molten heather honey; oak seasoning from sherry casks adds toasted, nutty depth and a gentle tannic grip. The balance is warm and well-rounded, medium to full-bodied with a long, smoky, spiced finish. Producer notes: Crafted at Highland Park Distillery in Kirkwall, Orkney — a distillery with roots back to 1798 — this iconic expression channels the island’s unique character: sea air, peat and a temperate climate that shape malt and smoke. Winemaking / Maturation notes: Matured predominantly in European and American sherry-seasoned oak casks (with French and American oak influence noted in some cask components), the whisky gains dried-fruit, orange peel and spice from sherry oak, while toasted oak lends structure. Bottled at 40% ABV with a traditional T-top cork closure. Vineyard / Field notes: Although not a wine, the spirit carries the terroir of Orkney — windswept peatlands, coastal salt-laden air and local floor-malted barley traditions — which together create the signature heather smoke and saline backbone.

Traditional floor-malted barley handling, combined cask regimes (European and American sherry-seasoned oak, French and American oak influences) and a respect for craft create the signature balance of citrus, sweet dried fruit, spice and smoke.
