This 2011 from Château Chasse-Spleen shows the classic Moulis energy: a deep, brilliant red with a nose of ripe plum, subtle vanilla from oak and a cool minty, peppery lift. On the palate it opens with a clear, incisive attack; fine-grained but quite firm tannins are wrapped in a mouth-coating texture and a hint of liquorice that leads into a long, persistent finish. Estate notes confirm harvests across September and vinification in temperature-controlled stainless steel and concrete vats, followed by 12–16 months in barrels with about 40% new oak. The vineyard sits on Garonne gravel over a chalky subsoil, giving the wine structure and mineral lift. Owned and run by Bernadette Villars and her daughters, the domaine balances careful sorting in the cellar with classical maturation — this vintage benefits from decanting and can age further in bottle.
