品飲筆記:酒色深沉,黑莓與黑櫻桃的成熟果香先行,帶著溫暖的香草與一絲咖啡與木槿花香。入口飽滿又多汁,酸度明亮把果實拉得有型,但同時單寧紮實、帶點嚼感,法國橡木的香氣與甜香融入尾段,收結乾淨且帶嚼勁。 酒莊與葡萄園:Vatan Toro(隸屬Bodegas Ordoñez)出品,葡萄來自1900年栽植、保留原生根系的老藤,老藤低產、養分累積,使酒體更有濃度與深度。 釀造手法:嚴格選果後去梗,整串或整顆入三噸開放式不鏽鋼溫控發酵槽,使用自然菌種自然發酵;主發酵與乳酸發酵都在桶中完成。之後以18–22個月的法國橡木桶(並搭配少量500–600L的大桶)熟成,帶來層次感與香草、烘烤香的細緻結構。建議醒酒一小時以上,與燒烤或厚切紅肉最合。喝的時候可以慢慢感受單寧與果酸如何互相拉扯,口感很有舞台感。
Tasting Note: Deep ruby with a dense core. Aromas of ripe blackberry and black cherry lift from the glass, layered with vanilla, a touch of coffee and floral hibiscus. On the palate it is concentrated and juicy yet tightly wound—fresh acidity balancing ripe fruit, with firm, grippy tannins and well-integrated French oak. The finish is long, crunchy and succulent, promising further integration with a few years of cellaring. Producer & Vineyard: From Vatan Toro under Bodegas Ordoñez, this wine is drawn from vines planted in 1900 on original, ungrafted rootstock. Those century-old vines lend depth and concentration to the fruit. Winemaking & Ageing: Bunches are rigorously sorted, destemmed and fermented (whole berries to open-top, three-ton stainless fermenters) with indigenous yeasts. Primary and malolactic fermentation finish in barrel. The wine is aged 18–22 months primarily in Bordeaux and Burgundy French oak barrels, with a small portion in 500–600L puncheons and demi-muids, producing a savory oak frame and layered texture.
